Healthy Blueberry Juice

Ingredients:

8 quart-sized saucepan
Stevia
five lbs. fresh blueberries
Spoon
Big metal colander
1 potato masher
Air-tight container

How to make:
  • Put the blueberries in the big colander and rinse them well with cold water to get rid of any bugs or debris. Shake the colander while washing to jumble the blueberries.
  • Pour two cups of water into a medium-sized saucepan, and then mix in 2 packets of stevia or 1 table-spoon of stevia. Add blueberries to the liquid. Fill the pot half way full of the blueberries.
  • The blueberries should fill the eight quart pot about halfway full. Pour cold water over the blueberries in the pot until the blueberries covered with about 1 inch of water.
  • Put the lid on the pot. Turn the heat on under the pot and set to low heat and allow the mixture to simmer for about two hours. Check regularly to insure there is sufficient water in the pot. Add water to the pot a little at a time as needed to avoid burning.
  • Meticulously mash every one of the blueberries in the pot using a potato masher. The pot should be about full with only the top quarter of the pot not yet full of blueberry juice.
  • Put a metal colander over a big vessel and cautiously pour the pot of mashed blueberries into the colander.
  • Use a large spoon to smash the blueberries into the colander. This further drives out liquid from the pulp. The result should be enough liquid to fill a one gallon container.
  • Pour the resultant blueberry juice into the pot, and place the pot back onto the burner. Bring the blueberry juice to a boil. Let the fluid boil for approximately two minutes while stirring it so it does not burn and then turn the stove off.
  • Allow the resulting blueberry juice to cool to room temperature. Place some of the blueberry juice in the refrigerator and chill for about four to five hours prior to serving. For every six ounces (about 3/4 cup) of this concentrate, you can create about two quarts of blueberry drink.
  • Let the fluid cool to room temperature. Pour the rest of the liquid into air-tight containers for freezing.

Tips for the cook

For a delicious blueberry drink put 1 cup blueberry juice concentrate plus 1 3/4 cups country time 
lemonade plus 30 packets or 15 tsp of liquid stevia into 1 1/4 gallons of water.

The blueberry pulp left over in the colander from making the juice can be used in various recipes.

Extracting the blueberry juice. Line a large container with clean cheesecloth. The cloth will need to be two layers to provide enough strength. Several inches of cloth out of the pan are needed. Draw together the ends of the cheesecloth to form a bag containing the blueberry pulp on the inside. Be cautious as the juice is very hot and can produce terrible burns. Wind the cheesecloth bag to squeeze out the blueberry juice and then put the bag in a strainer that is setting in a bowl so the rest of the blueberry juice can drain. Don't over squeeze the bag or the blueberry juice may be cloudy. Allow the fluid to drain for a couple hours and add the blueberry juice that drained out of the cheesecloth back to the pot.
