Heart Healthy Chicken Chili


There is nothing quite like a hot bowl of chili to take the chill off your bones. When it's cold outside, you need something nice and warm to warm you on the inside. But that does not mean you can not find a healthy dinner recipe to prepare the family's favorite treat. Which I will share with you, take a little time, but prepare enough for 10. Heart Healthy Chicken Chili
11 ounces dried white beans (pinto, navy, Great Northern)
3 sprigs fresh thyme
8 fresh parsley stems
1 bay leaf
1 tsp. salt
2 2/3 cups water
2 tbsp. olive oil
1 cup onions, chopped
5 cloves garlic, minced
2 ½ lbs. boneless, skinless chicken breast, (cut into small pieces)
1 cup dry white wine (optional)
8oz. fresh mushrooms, sliced
1 ½ cups frozen corn (no-salt added)
½ cup red bell pepper, chopped
½ cup green bell pepper, chopped
½ tsp hot pepper sauce
1 ½ tsp. dried oregano
1 tsp. black pepper
½ cup parsley, chopped
Directions:
1. Put pinto beans in a microwave safe 1 ½ quart casserole.
2. Bind parsley stems, bay leaf and thyme together with a string.
3. Add bound seasonings to beans along with ½ tsp of the salt and the water.
4. Cover beans and microwave on high for 30 minutes.
5. Continue cooking on medium for one hour, stirring every thirty minutes (add water as needed).
6. In a large stockpot, sauté onions and garlic in olive oil.
7. Add chicken, wine and mushrooms.
8. Cover and cook over medium heat for 5 minutes.
9. When beans are cooked, stir half into the pot with chicken.
10. Mash the remaining beans and add them to the pot.
11. Add corn, peppers, hot pepper sauce, oregano, salt and pepper.
12. Simmer for 20 minutes. Stir in chopped fresh parsley.

Health benefits: An excellent source of protein, low-fat chicken and digestible. Nuts are rich in fiber and protein and low in fat and cholesterol. Fresh herbs add flavor so you can store the salt to a minimum to maintain a low sodium levels.

2. Add chicken stirring constantly. After about 2-3 minutes add shiitake mushrooms and bok choy. Continue to stir fry for another 3-4 minutes and add soy sauce, rice vinegar, salt and pepper.

3. Serve with rice or you may just eat it as it is.

Here is a healthy blueberry muffin recipe for you to try. Using wheat flour and a modest amount of sugar and butter so they still taste great but have about half the calories of a typical coffee shop muffin.

Healthy Whole Wheat Blueberry Muffins
makes 12 muffins
4 tablespoons butter
1/2 cup sugar
2 large eggs
2 cups white wheat flour or whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 1/2 to 2 cups (about 1 pint) blueberries, either fresh or frozen
1 tablespoon sugar mixed with 1/2 teaspoon cinnamon for sprinkling on top (optional)

Preheat your oven to 375°F. Grease 12 muffin cups with nonstick vegetable spray.
In a large mixing bowl, beat together the butter and sugar with an electric mixer until they are light and creamy. Add the eggs, one at a time, beating well after each addition.

In a separate bowl, whisk together the flour, baking powder and salt. Add the dry ingredients to the butter/sugar/egg mixture, and beat just until blended. Stir in the milk and vanilla, mixing just until smooth. Quickly stir in the berries.

Fill the muffin cups 3/4 to almost full, using all of the batter. An ice-cream scoop works well for this. Sprinkle with the cinnamon sugar mixture, if desired.

Bake the muffins for 25 to 30 minutes, until they are light golden brown. Remove the pan from the oven and place it on a rack to cool for 10 minutes. After 10 minutes, run a knife around the edge of one muffin, and try to lift it out of the pan. If the muffin lifts out of the pan without crumbling, remove all of the muffins and allow them to cool completely on a wire rack. If the muffin sticks or the top peels off, allow them to cool an additional 10 minutes, then try again. (Even if they crumble, they will still taste great!)


About 202 calories per muffin. Which is about half the calories of the typical coffee shop muffin.
